Chestnut Mushroom Omelette : Start the day off right

Who doesn't like a Mushroom Omelette, packed full of flavour and very good for you, what's not to love?!

Ingredients You’ll Need

To whip up this delightful dish, gather the following ingredients, these will be rough as we don't need to be too perfect here:


  • 3 eggs
  • Butter
  • Parsley
  • Sliced mushrooms
  • Handful of grated cheddar
  • Salt / pepper
  • Olive oil
  • Garlic puree or minced garlic


Preparing the dish

Crack three large eggs into a bowl, seasoning with salt and pepper then whisk until well combined. You'll want to grate a portion of cheddar or have ready grated cheddar for this recipe, you'll want this ready before you cook the eggs otherwise you will overcook the eggs whilst you are prepping, always get the prep done first.


Cooking the mushrooms


Chop the mushrooms into decent sized slices, too thin and they will burn. Using olive oil and butter and some ideally fresh parsley with a hit of garlic puree, within 5 minutes your mushrooms will be ready and can be set aside for later.

Cooking the eggs.

You will want to place a knob of butter within your pan until it gets foamy, once this is done pour the entire egg mixture into the pan, cooking for a couple of minutes / more if you prefer your eggs more cooked.

After a minute you can add the "toppings" first the grated cheddar then the mushrooms, fold over and serve.
