King Oyster tends to crop very heavily on the first flush giving its total yield mostly on the first flush. with a chance of a second, bumper crop in a few weeks.
Step One - Initial Setup
IMPORTANT: Don't leave your kit in the postal box - it needs immediate attention!
Firstly Remove the top inch of the bag, straight across so it is open
Place the provided topsoil onto the colonized substrate log.
Position your kit on a dish or plate between 15-21°C
ideal range: 17-18°C
Begin misting the topsoil and inner bag walls 2-3 times daily - avoid direct spray on developing pins.
Your King Oyster kit will produce 1-2 flushes, with the first harvest typically yielding 800g of mushrooms.

Bag cut too low which reduces protection from draughts and reduces humidity, causing growing issues such as dry mushrooms.

Top inch of bag removed. Good air exchange maintained. Protection from draughts maintained and humid environment

What to Expect: Day by Day
King Oyster kits arrive as a fully colonised log. The milestones below show what typical growth looks like from setup to harvest.

Day 1 - Setup
Open and follow the growing guide. The block will be white with healthy mycelium. Position in a cool room with indirect light and airflow. Begin misting twice daily.

Day 2-4 - Pins Visible
Pins are now starting to push through the topsoil. Continue misting and maintain stable conditions.

Day 5-6 - Recognisable Shapes
Now chunky, and more numerous, visible stems develop. King Oyster pins are larger than standard oyster pins. Continue misting and maintain stable conditions.

Day 6-7 - Rapid Growth
Often at varying sizes, king oyster mushrooms begin to take shape, continue spraying and give time to mature.

Day 8-10 - Harvest
Harvest when stems are firm and thick with small flat caps. The stems should feel dense and solid. Cut at the base with a clean blade for the cleanest removal.
Timelines are typical results at 15-21 degrees with regular misting. View full growing timeline with all varieties
Understanding Your Kit's Development
Your King Oyster kit arrives fully colonized with healthy white mycelium. This ready-growing advantage means you skip the 3-4 week colonization period and move straight to fruiting, ensuring contamination-free success.
Growing King Oyster Mushrooms
Pro Growing Tips
King Oysters need more fresh air than other oyster varieties. Ensure good ventilation while maintaining 80-90% humidity.
Step Two - Pin Formation (Days 3-5)
King Oyster mushrooms are unique in the oyster family - they develop slowly but produce impressive, thick-stemmed fruit bodies that are worth the wait.
Within 3-5 days of setup, you'll notice small white pins (baby mushrooms) forming on the surface. These initial pins will develop, with time into the characteristic trumpet-shaped mushrooms.
Continue misting 2-3 times daily, focusing on the bag walls and topsoil rather than directly on the pins.

Dry topsoil, with visible light speckles. Mushrooms will struggle to grow, increase spraying.

Deep black colour of topsoil from regular spraying, maintain this colour.

Critical Growing Information
Air Exchange is Essential
King Oysters require MORE fresh air than other oyster varieties. If you see long, thin stems with tiny caps, immediately increase ventilation. Open the bag wider or gently fan 2-3 times daily to reduce Co2. Proper air exchange produces thick, meaty stems - the prized part of King Oysters!
Never seal the bag.
Step Three - Development & Harvest (Days 7-10)
King Oysters grow more slowly than other oyster varieties but develop impressive, thick stems that can reach 10-15cm in length.
Harvest whilst the caps remain uniform in shape, before the edges begin to upturn, or if spores are seen on the topsoil below. This is when flavor and texture are optimal.
Grasp the entire cluster at the base and gently slice the mushroom off flat with the topsoil with a clean, sharp knife. clean / brush away any remaining substrate if needed.
The entire mushroom is edible and prized - especially the thick stem which maintains its firm texture when cooked.
Fresh King Oysters keep exceptionally well - up to 7 days refrigerated in paper bags.

Harvesting Your King Oyster Mushrooms

King Oyster Mushroom Benefits
King Oyster Mushrooms Culinary Uses
King Oyster mushrooms are culinary gold - their thick stems can be scored and pan-fried as "scallops," sliced lengthways for "bacon," or shredded for pulled "pork." Unlike other mushrooms, they maintain their firm texture and don't shrink significantly when cooked.
They absorb marinades beautifully and develop a golden, crispy exterior when properly seared.
Popular preparation methods include:
- Score and pan-fry for vegan "scallops"
- Slice lengthwise and crisp for mushroom "bacon"
- Shred and season for pulled "pork" texture
- Grill / BBQ whole with herbs and garlic
- Dice for risottos and pasta dishes

Troubleshooting Guide

Long Thin Stems
Too much CO2 - increase air exchange by opening bag wider / ensure environment is not enclosed.

No More Growth?
Clear topsoil of debris and stalk as this stops further growth

White "dust" on topsoil
These are spores and are an indication your crop should have been picked sooner, pick ASAP

Yellowing Mushrooms
Lack of topsoil water / environmental humidity / draughts or high heat.
