These elegant, slender mushrooms are a joy to grow and an even greater joy to eat. To whet your appetite, here's one of our favourite ways to cook them.

Meet the Golden Enoki

Enoki mushrooms are one of the most visually striking varieties you can grow at home — known for their long, slender stems and tiny caps. The Golden Enoki is a particularly beautiful cultivar: warm amber in colour with a slightly nuttier, richer flavour than its white counterpart. Both varieties are popular in East Asian cooking but work brilliantly in all kinds of dishes.

Like all our kits, the Enoki range will arrive fully colonised and ready to fruit, so no specialist knowledge is required. Just the right conditions and a little patience, and those beautiful long stems will do the rest.

Recipe: Crispy Pan-Fried Enoki with Fried Egg

This recipe is simple, quick and lets the mushrooms do the talking. The Enoki crisp up beautifully in the pan, the egg is cooked directly on top, and the whole thing lifts out in one piece, ready to eat immediately. It works as a fast breakfast, a light lunch or a satisfying supper.

Ingredients

100g Enoki mushrooms

Golden or white, or a mix of both. We used Golden for this, but I would recommend the white for a better colour once cooked.

Olive oil

Enough to just cover the mushrooms in the pan

1 egg

Separated. White added first, yolk placed on top shortly after

Method

Heat the pan

Get a frying pan hot over a medium-high heat, then add enough olive oil to just cover the base and mushrooms. You want a confident sizzle when they go in.

Fry the Enoki

Add your 100g of Enoki mushrooms to the hot oil. Leave them to fry without moving them too much, patience here is rewarded. Cook until they are close to crisp and golden at the edges.

Add the egg

Pour the egg white directly over the mushrooms first, letting it spread and begin to set around them. Then carefully place the yolk on top, centrally, to finish cooking to your liking.

Lift and serve

Once the egg white is fully set, use a fish slice or other firm utensil to carefully remove the entire piece from the pan in one go. Serve immediately, season with pepper and sea salt on the egg yolk.

The key to this dish is patience — let the mushrooms crisp properly before adding the egg, and resist moving them around the pan. The result is a beautiful, cohesive piece that holds together and looks as good as it tastes.

Enoki mushrooms are delicate in texture but bold in character.  they crisp up in a way that most mushrooms simply don't, making them genuinely special to cook with. They're also nutritious: low in calories and a good source of B vitamins, fibre and antioxidants. Grown at home from one of our kits, they'll be the freshest mushrooms you've ever tasted.

Golden Enoki

A warm amber variety with a nuttier, slightly richer flavour. Visually stunning and wonderfully versatile in the kitchen.

White Enoki

The classic variety — delicate, mild and beautifully crisp when fried. A staple in Japanese and Korean cooking and a brilliant introduction to growing something a little different.
