How to Cook Chanterelle (Girolle) Mushrooms

Why cook chanterelles?
Chanterelles (Cantharellus spp.) are prized for their nutty, peppery, fruity flavour. They must be cooked — raw chanterelles are tough to digest and may contain harmful bacteria or toxins. Cooking makes them safe and delicious.
Note: Limit portion sizes — chanterelles are high FODMAP in larger servings.

Pan-Fried Chanterelle Recipe

Ingredients
- 300–400 g fresh chanterelles, cleaned
- 1 tbsp neutral oil
- 1 tbsp butter
- 1 tsp garlic purée (or 1 clove garlic, minced)
- 1 tbsp parsley or thyme, chopped
- Salt & pepper to taste
Method
- Brush dirt from mushrooms (avoid soaking).
- Heat oil in a pan over medium-high heat. Add chanterelles.
- Sauté until golden, 4–5 minutes.
- Add butter and garlic. Cook briefly until fragrant.
- Stir in herbs, season with salt & pepper. Serve immediately.
