How to Cook Chanterelle (Girolle) Mushrooms

Why cook chanterelles?

Chanterelles (Cantharellus spp.) are prized for their nutty, peppery, fruity flavour. They must be cooked — raw chanterelles are tough to digest and may contain harmful bacteria or toxins. Cooking makes them safe and delicious.

Note: Limit portion sizes — chanterelles are high FODMAP in larger servings.

Pan-Fried Chanterelle Recipe

Serves: 2 · Prep: 10 min · Cook: 8 min

Ingredients

  • 300–400 g fresh chanterelles, cleaned
  • 1 tbsp neutral oil
  • 1 tbsp butter
  • 1 tsp garlic purée (or 1 clove garlic, minced)
  • 1 tbsp parsley or thyme, chopped
  • Salt & pepper to taste

Method

  1. Brush dirt from mushrooms (avoid soaking).
  2. Heat oil in a pan over medium-high heat. Add chanterelles.
  3. Sauté until golden, 4–5 minutes.
  4. Add butter and garlic. Cook briefly until fragrant.
  5. Stir in herbs, season with salt & pepper. Serve immediately.
