Shiitake Mushroom and Green Bean Pasta (serves 4)

Recipe by Lou

This comforting pasta dish pairs the rich, savoury flavour of shiitake mushrooms with fresh green beans and a simple buttery sauce. It’s an easy, well-balanced recipe that works just as well for a midweek dinner as it does for a relaxed weekend meal.

Ingredients

12 oz (340 g) short twisted pasta

1 cup (8 oz) shiitake mushrooms

4 oz green beans, cut in half

4 tbsp butter

1 small onion, grated

2 cloves garlic, finely chopped

1/2 cup dry white wine

1/2 cup water

2 tsp dried thyme

4 tbsp Parmesan cheese

Method

1. Cook the pasta according to the packet instructions.

2. Prepare the vegetables by grating the onion, chopping the garlic, trimming and halving the green beans, and cleaning the mushrooms. Remove any tough stalks.

3. Melt 2 tbsp of butter in a pan over a medium-high heat. Sauté the onion for 2 minutes, then add the garlic and cook for a further 1–2 minutes until fragrant.

4. Deglaze the pan with 1/4 cup of white wine, scraping up any bits from the bottom. Cook until the liquid has reduced by half.

5. Reduce the heat to medium and add the mushrooms, green beans and 1 tbsp of butter. Cook, stirring occasionally, for 5 minutes. Add 1/4 cup of water and cook for another 4 minutes, adding the thyme partway through.

6. Turn off the heat and stir in the remaining butter and the Parmesan cheese.

7. Serve over the cooked pasta.
