For the Mushroom
•1 large portobello or flat mushroom
•1-inch chunk of cheddar cheese
•1-inch slice of goat’s cheese
•1 garlic clove, finely chopped
•Handful of chopped spinach
•Handful of diced red pepper
•Knob of butter
•Drizzle of olive oil
Step-by-Step Instructions
1. Prepare the Ingredients
- Preheat your oven to 180°C (350°F).
- Chop the garlic, red pepper, and spinach.
- Crumble the cheeses into small pieces.
2. Stuff the Mushroom
- Place the mushroom cap-side down on a baking tray.
- Spoon the filling into the mushroom, making sure it’s evenly spread.
3. Bake to Perfection
- Bake for 20 minutes until the cheese is melted and the mushroom is tender.
- For a golden top, switch the oven to grill mode for the last few minutes.
4. Serve & Enjoy
- Let it rest for a minute before serving.
