Morel mushrooms are one of the most sought-after wild mushrooms thanks to their unique honeycomb texture and deep, earthy flavor, not commonly seen in the supermarkets but rather high end restaurants. These can either be foraged for "fresh" Morel mushrooms but you will find the dried counterparts much more readily available online.

Ribeye Steak with Fried Egg & Mustard Morel Sauce

Ingredients

| 1 ribeye steak (room temp, 20 mins) | 30g dried morel mushrooms |
| 1 tbsp olive oil | 200ml boiling water |
| ½ tsp garlic powder | 1 tbsp chunky wholegrain mustard |
| Salt & freshly cracked black pepper | 1 tsp plain flour |
| 1 egg | 1 knob of butter |
| ½ tsp garlic purée | |
| Salt & pepper, to taste |
Method
Prepare the Steak
Let the ribeye rest at room temperature for 20 minutes.
Rub with olive oil, then season with garlic powder, salt, and pepper on both sides.
Cook the Steak & Egg
Heat a griddle pan until very hot.
Cook the ribeye for 2 minutes per side for a rare finish (adjust to taste).
While the steak cooks, fry the egg until golden around the edges.
Make the Mustard Morel Sauce
Soak the dried morels in 200ml of boiling water for 5 minutes.
Add chunky wholegrain mustard, flour, butter, garlic purée, salt, and pepper.
Stir and cook until thick and chunky in texture.
Serve & Enjoy
Place the ribeye steak on a warm plate.
Top with the fried egg.
Generously pour over the mustard morel sauce and serve immediately.

Pork Belly with Celeriac Mash & Morel Sauce

| 1kg pork belly, do not score! | 1 large celeriac, peeled & diced | 30g dried morel mushrooms |
| Olive oil | 500ml milk (for boiling) | 200ml water |
| Salt & black pepper | 1 tbsp English mustard | 1 mushroom stock cube |
| ½ tsp garlic purée | Small sprinkling of Bisto gravy granules | |
| Pinch of nutmeg | 1 knob of butter | |
| Salt & pepper to taste | Fresh or dried parsley (for garnish) |
Method
Cook the Pork Belly
Preheat fan oven to 120°C.
Place the pork belly in a foil “dish” and wrap tightly so it cooks in its own fat (confit style).
Roast for 2½ hours, turning halfway and tightening the foil.
Increase oven temp to 240°C fan for the final 30 minutes to crisp the crackling.
Prepare the Celeriac Mash
Peel and dice the celeriac.
Boil in milk until soft.
Transfer to a blender with olive oil, nutmeg, garlic purée, salt, pepper, butter, and English mustard.
Blend until smooth and creamy. Set aside until plating.
Make the Morel Sauce
Heat 200ml water with the mushroom stock cube.
Add dried morels and simmer for 5 minutes.
Stir in a sprinkling of Bisto gravy granules to thicken.
Finish with a knob of butter for a glossy texture.
Plate & Serve
Slice the pork belly into portions.
Spoon creamy celeriac mash onto the plate.
Lay the pork belly slices on top.
Pour over the rich morel sauce and garnish with parsley.
