Shiitake Mushroom Growing Kit: Over a Decade of Growing Excellence

Discover why our Shiitake kit – the third variety we ever launched – remains one of our most beloved growing kits more than 10 years on.

When we first introduced our Shiitake mushroom growing kit over a decade ago, we knew we were offering something special. What we didn't anticipate was just how passionate our customers would become about growing this iconic Asian mushroom at home. Today, our Shiitake kit stands as a testament to consistency, quality, and the timeless appeal of fresh, homegrown umami.

Whether you're a seasoned home grower or considering your very first kit, here's everything you need to know about why Shiitake deserves a place in your kitchen.

Shiitake Mushroom Growing Kit

Over 10 Years of Growing Excellence

Launched as our third mushroom kit over a decade ago, Shiitake has become one of our most beloved varieties – trusted by thousands of home growers across the UK. Through years of refinement, we've perfected the substrate, the growing conditions, and the instructions to give you the best possible results from your very first flush.

Why Shiitake Is Special

A Massive First Crop

Our Shiitake kits are legendary for their impressive first flush. Most home growers can expect over 1kg of premium mushrooms from their very first harvest – a yield that often surprises first-time growers. This generous output makes Shiitake one of the most rewarding kits we offer, providing more than enough mushrooms to cook fresh and preserve for later use.

Intense Umami Flavour

Shiitake mushrooms are prized for their deep, savoury umami taste – often called the "fifth taste" alongside sweet, salty, sour, and bitter. They're a cornerstone of Japanese, Chinese, and Korean cuisine, lending incredible depth to stir-fries, ramen, hot pots, and traditional dashi broths. Fresh shiitake have a meaty texture and rich earthiness that simply can't be replicated with supermarket button mushrooms.

Perfect for Preserving

Here's something fascinating: dried shiitake actually intensify in flavour. The drying process concentrates the umami compounds, creating a pantry staple that lasts for months and adds instant depth to any dish. With such a generous first harvest, you'll have plenty to dry and store – making this kit exceptional value for money.

Watch Your Shiitake Grow

One of the most rewarding parts of growing your own mushrooms is watching the transformation. Shiitake start as small pins emerging from the substrate, then rapidly develop into full-sized mushrooms over just a few days.

Trusted by Local Food Professionals

Confidence in our Shiitake doesn't just come from our customers – it comes from professional food retailers too. Every week, we grow fresh Shiitake mushrooms for The Sussex Peasant, a travelling farm shop bringing premium local produce across Sussex.

If our Shiitake is good enough for professional food retailers serving discerning customers, you can be confident it'll be perfect for your kitchen too. The same care, expertise, and quality that goes into our wholesale supply goes into every kit we ship.

Who's This Kit Perfect For?

Asian Cuisine Enthusiasts

If you love cooking ramen, stir-fries, hot pots, miso soup, or traditional Japanese dishes, fresh shiitake will transform your cooking. The flavour of just-harvested mushrooms is something you simply can't buy in supermarkets.

Home Preservers

The large first harvest is ideal for drying. Build up your pantry with shelves of dried shiitake that will last months and add restaurant-quality depth to home cooking whenever you need it.

Umami Lovers

If you're the kind of cook who reaches for parmesan rinds, anchovies, or soy sauce to add depth to dishes, you'll fall in love with what fresh and dried shiitake can do. They elevate soups, sauces, risottos, and countless other dishes.

How to Use Your Shiitake Harvest

Fresh Cooking

Slice and add to stir-fries, ramen bowls, miso soup, or sauté with garlic and soy sauce as a savoury side dish. Fresh shiitake also work beautifully roasted with olive oil and thyme as a meaty side or pasta topping.

Drying & Storing

Slice thinly and dry in a dehydrator or low oven (around 50°C) until completely brittle. Store in airtight containers and rehydrate in warm water for 20 minutes before cooking – the soaking liquid makes an incredible umami-packed stock.

Umami Powder

Grind dried shiitake into a fine powder using a spice grinder for an instant umami boost to any savoury dish. A teaspoon stirred into stews, sauces, gravies, or sprinkled over roasted vegetables works as a secret weapon in your spice rack.

Try This Recipe With Your Harvest

One of our favourite ways to showcase fresh shiitake is in a simple, restaurant-quality pasta dish. The umami flavour of the mushrooms shines through, creating a rich, savoury sauce with just a handful of ingredients.
