Lion's Mane Nuggets - Recipe

Air Fried Lion's Mane Mushroom Nuggets

Air fried Lion’s Mane mushroom nuggets give a crispy, golden vegan bite with a genuinely “meaty” texture. This recipe uses simple pantry ingredients and an air fryer to create a crunchy panko coating without deep frying. These nuggets work as a snack, a wrap filler, a burger topper, or a quick protein-style swap for plant-based meals. They also suit home growers because Lion’s Mane from a Merryhill Mushrooms growing kit cooks fast and holds shape well.

Lion’s Mane works for nuggets because the fibres pull apart like shredded meat and crisp beautifully. Lion’s Mane also has a slightly seafood-like bite that stays satisfying after air frying. It turns into a crunchy outside and tender middle with very little effort.

Mushrooms are a popular plant-based substitute for meat if you're following a vegan diet. One of the easiest ways to cook them is by air frying and Lion's Mane is the perfect variety for making crispy, satisfying vegan nuggets. The versatility of mushrooms means you can add them to almost any dish, from avocado on toast for breakfast to a salad at lunch and pasta for dinner.

How to cook.

Air fried Lion’s Mane mushroom nuggets come out best when the batter is thick and the coating is pressed in firmly. The air fryer should be hot before the tray is loaded. They cook quickly, so the first batch is worth watching closely.

Ingredients

This recipe uses simple store-cupboard ingredients to create a flavour-packed batter and crispy breadcrumb coating. Serves 2.

1 Lion's Mane mushroom

Torn or cut into bite-sized nugget pieces

80g plain flour

The base for your seasoned batter

120ml unsweetened plant-based milk

Or whole milk if you're not cooking vegan

100g panko breadcrumbs

For a light, extra-crispy coating

Spices & Seasoning

1 tsp garlic powder · 1 tsp onion powder · 1 tsp smoked paprika · ½ tsp cumin · salt and pepper to taste

Method

1

Preheat your air fryer

Set your air fryer to 190°C and wait for it to reach temperature.

2

Prepare the dry mix

Combine the flour, garlic powder, onion powder, smoked paprika, cumin, salt and pepper in a mixing bowl and stir well.

3

Make the batter

Pour the plant-based milk over the dry mix and stir until you have a smooth, thick batter.

4

Prepare the mushroom

Tear or cut your Lion's Mane mushroom into bite-sized nugget pieces. Tearing by hand gives a more natural shape and helps the batter grip better.

5

Coat the nuggets

Dip each mushroom piece into the batter, making sure it's generously coated, then roll in the panko breadcrumbs until fully covered.

6

Air fry for 10 minutes

Place the coated nuggets in your air fryer and cook for 10 minutes, checking on them regularly. You're looking for a golden brown colour and a nice, crisp exterior.

7

Serve and enjoy

Serve on their own with your favourite dipping sauce, or toss them into a wrap, salad or burger bun for a satisfying plant-based meal.

Lion's Mane has a naturally meaty, slightly lobster-like texture which makes it ideal for nuggets. Tearing by hand rather than cutting gives a more natural, chicken-like shape and helps the batter grip better — giving you a crispier finish every time.

Watch the Recipe

See exactly how we make our Lion's Mane mushroom nuggets in the video below — from batter to basket in just a few minutes.

What makes the coating crispier every time?

A crispier coating comes from consistent piece size, thicker batter, and dry panko that gets pressed in. The air fryer basket also needs airflow around each nugget. They should not be stacked.

Quick crisp tips

  • Use panko, not standard breadcrumbs.

  • Keep mushroom pieces similar size.

  • Press crumbs on, then rest coated nuggets for 2 minutes before air frying.

  • Cook in one layer to avoid steaming.

What seasoning variations work best with Lion’s Mane?

Seasoning variations work best when they match the savoury, slightly sweet flavour of Lion’s Mane. Spice blends also change the “nugget” vibe from classic to smoky to punchy. It helps to keep salt modest until the end because dips add salt too.

Easy flavour options

  • Salt and pepper plus lemon zest

  • Soy sauce and garlic (add a small splash to batter, then reduce salt)

  • Smoked paprika and chilli flakes

  • Curry-style (cumin plus a pinch of turmeric)

  • Herb-led (dried thyme and parsley)

What sauces and meals can you use these nuggets in?

These nuggets fit into meals because the coating stays crisp and the inside stays tender. They suit quick plates and packed lunches. They also work as a “centre” for plant-based dishes that normally rely on chicken-style nuggets.

Serving ideas

  • Dipping sauces: vegan mayo, sweet chilli, garlic aioli, barbecue

  • Wraps: lettuce, pickles, shredded cabbage, hot sauce

  • Salads: crunchy topper with grains, avocado, and lemon dressing

  • Buns: nugget burger with slaw and a smoky sauce

  • Bowls: rice, cucumber, spring onion, sesame dressing

How do you store and reheat Lion’s Mane mushroom nuggets?

Lion’s Mane mushroom nuggets store best when cooled fully before chilling. A sealed container keeps them fresh, but a paper towel layer helps reduce moisture. They reheat well in an air fryer, which brings the crunch back.

Storage

  • Fridge: up to 2 days in an airtight container

  • Freezer: best frozen after cooking, then reheated in the air fryer

Reheat

  • Air fryer at 180°C for 3 to 6 minutes until crisp
