Dried porcini mushrooms are a great for cooking and are a store cupboard essential. They work great in a Ramen. To use: soak for 20 minutes in warm water or milk drain and use like an ordinary mushroom in risottos stroganoffs stews or stir fries.

The French name for porcini is cepes or ceps; the English name is penny bun; and the Latin is Boletus edulis.
