How to Use Mushrooms as a Meat Replacement: A Savoury Guide to Going Plant-Based

Discover how to cook with mushrooms as a satisfying and sustainable alternative to meat in your everyday meals.

Why Mushrooms Work So Well as a Meat Substitute

  • Umami Flavour: Mushrooms are naturally rich in umami—the same savoury taste found in meat, soy sauce, and aged cheese.
  • Hearty Texture: Varieties like king oyster, lion’s mane, shiitake, and portobello have dense, chewy textures that mimic meat beautifully.
  • Nutritional Value: Mushrooms are low in calories, high in fibre, and packed with vitamins like B12 (in fortified varieties), D, selenium, and antioxidants.
  • Sustainability: Growing mushrooms requires significantly less land and water than raising livestock, making them an eco-conscious choice, all the flavour and texture you'd want, but planet friendly!

Using mushrooms as a meat substitute is a great way to incorporate mushrooms into your daily diet and reap the benefits of these nutritious foods.

6 Easy Ways to Use Mushrooms Instead of Meat

1. Mushroom Burgers

Best mushrooms:Portobello or a blend of chestnut and oyster.

Use whole grilled portobello caps as burger patties or mix finely chopped mushrooms with breadcrumbs, lentils, and spices to make homemade patties. You can also make healthier burgers, or even meatballs by combining beef mince and mushrooms.

7. Air frying mushrooms

Best mushrooms: Lion's Mane and Portobello.

Air frying mushrooms is a great and time efficient way to prepare mushrooms, you can bake stuffed mushrooms such as Portobellos, quicker than you could in an oven, its also cheaper, whilst preparing the rest of your meal, you can have two portobellos baking in the air fryer for 20 minutes and they will come out great everytime.

You can also use the air fryer to create texture from mushrooms, which is a common complaint with people who dont like mushrooms! Here's how we turned Lion's Mane into delicious "Vegan Nuggets"

Tips for Getting the Best Meat-Like Results

  • Don’t overcrowd the pan: Mushrooms release water as they cook. Give them space to brown for maximum flavour and better texture.
  • Season boldly: Salt, garlic, soy sauce, and smoked paprika bring out the savoury depth mushrooms are known for.
  • Try different textures: Mix mushroom types or combine with lentils, beans, or tofu for layered texture in dishes.
