Chestnut mushrooms (Agaricus bisporus) are the same species as white button and portobello, just harvested at a later stage of maturity. The longer growth gives chestnut its firmer texture, earthier flavour, and higher concentration of antioxidant flavonoids than its white button cousin.

Growing Tips

The growing process will start when you remove the lid and activate with the top soil. They kits can be stored chilled for several weeks before use. Just sprinkle the enclosed bag of top soil onto your kit once rehydrated with water and put lid loosely back on for 8 days. Check whiteness each day and remove lid before the whiteness grows over the surface.

Chestnut and White mushroom kits use the topsoil casing method. A pre-spawned compost block sits at the base of the box, fully colonised with chestnut mycelium before it leaves the farm. You hydrate the included casing soil and spread it across the compost surface. The change in growing medium triggers the mycelium to fruit. This is the same method commercial mushroom farms use, scaled down to a 17.5cm box that fits on a kitchen worktop.

First pins appear through the casing 10 to 14 days after setup. The first harvest follows 4 to 8 days later. Pick a flush, wait 10 to 14 days, and the next flush develops in the same spot. Most kits give 3 to 4 flushes before the substrate runs out of nutrition, with the second and third flushes typically the largest.

Every Merryhill kit is hand-planted in small batches at our farm in Storrington, West Sussex. Six generations of mushroom growing experience sit behind the spawn, the compost recipe, and the casing soil mix. Kits dispatch same-day for orders placed before 2pm and arrive next-day via DPD, which means the spawn is at peak freshness when the kit reaches your door.

What you'll see at each stage

Day 1 to 3

The casing soil sits damp and dark on top of the compost. Nothing visible above the surface yet, but underneath, the mycelium is sending hyphae upward into the new layer.

Day 4 to 8

Thin white threads of mycelium spread across the casing soil. This is normal and means the kit is working. The mycelium is colonising the new layer in preparation for fruiting.

Day 9 to 15

Tiny brown pinheads appear on the casing surface, usually in clusters of 4 to 8. Each cluster will develop into a full flush of mushrooms over the following days.

Day 16 to 24

Pins develop into mushrooms with closed caps and short stalks. The first flush is ready to pick when caps are firm and rounded, before the veil under the cap breaks open. Yields range from 200g to 500g for a first flush, with second and third flushes often cropping heavier.

What are chestnut mushrooms?

Chestnut mushrooms (Agaricus bisporus) are the same species as white button and portobello, harvested at a later stage of maturity. The longer growth produces a darker, brown-capped mushroom with firmer texture, deeper umami, and a higher concentration of antioxidant flavonoids than the white form.

What's the difference between the Chestnut and White mushroom kits?

Both kits grow Agaricus bisporus using the same topsoil casing method, the same 16 to 24 day timeline, and the same 1 to 1.5kg yield range. The difference is the strain. Chestnut produces a brown-capped, firmer, earthier mushroom. White produces the classic pale button you see in supermarkets. How long until my first harvest?

First mushrooms are ready 16 to 24 days after setup at 14 to 21°C. Cooler rooms within that range push the timeline closer to 24 days. Warmer rooms bring it closer to 16.

How many mushrooms will one kit produce?

Each kit gives 3 to 4 flushes over 5 to 7 weeks, totalling 1 to 1.5kg of fresh mushrooms. That's the highest yield in the Merryhill range. Do I need to mist the kit?

Yes. Once the lid comes off (around day 8), spray the casing soil surface lightly with water daily. Keep it visibly damp, not saturated. Overwatering is the most common cause of failed flushes on chestnut and white kits. Our misting guide for mushroom kits covers the right technique.

Why is my kit only growing one mushroom?

Not necessarily anything wrong. Some chestnut flushes produce a single dominant mushroom instead of a cluster, particularly on the first flush. Our single mushroom troubleshooting page explains when this is normal and when to adjust your setup.

Can I delay starting the kit if I'm giving it as a gift?

Yes. Unopened kits keep for 2 to 3 months in their postal box at room temperature. Once the lid comes off, you have a further 10 days in the fridge before the kit needs activating. Can I grow chestnut mushrooms outdoors?

This kit is designed for indoor growing at stable 14 to 21°C temperatures, so UK outdoor conditions only suit it from late spring to early autumn, and only in a sheltered spot.
