Keep your kit in a cool, shaded spot between 10 and 18°C — a utility room, north-facing room or unheated porch is ideal. Mist lightly twice daily and your first slender Enoki clusters will be ready to harvest in around two to three weeks.

Enoki is the perfect kit for cool homes and cool seasons. The lower the light and the cooler the spot, the longer and more slender the stems will grow — the classic ramen-ready look that is almost impossible to find fresh in the UK.

Every kit is hand planted in small batches on our family farm in Storrington, West Sussex, using peat-free compost colonised with vigorous Flammulina velutipes mycelium.

This kit produces a total yield of 300g to 500g of fresh Enoki mushrooms across 1 to 2 flushes over 5 to 6 weeks, with your first crop ready in around 2 to 3 weeks.

Enoki Mushrooms: Frequently Asked Questions

What temperature do Enoki mushrooms need?

Enoki are cool-loving mushrooms and fruit best at 10 to 18°C. They are one of the few kits that genuinely enjoy a cooler corner of the house, such as a utility room, north-facing room, garage shelf or unheated porch. Avoid placing your kit near a radiator, in a sunny window or in any room that climbs above 20°C, as warmer temperatures slow fruiting and can stop pins from forming altogether. If your home runs warm in winter, the kit will be much happier in the coolest room you have.

How long does an Enoki kit take to crop?

You should expect first pins around 10 to 14 days after starting your kit, with harvest usually following within two to three weeks in total. Enoki crops more slowly than oyster varieties because it prefers cooler conditions, so patience is part of the process. If your room is on the cool side of the ideal range, growth will be slower but the mushrooms will be denser and better flavoured.

How many flushes will my Enoki Kit produce?

Most kits will produce two to three flushes of mushrooms. The first flush is usually the largest and densest. After each harvest, continue spraying the surface and the next flush will typically appear within one to two weeks. Total yield depends on temperature, humidity and how well the kit is rested between flushes.

Why are my Enoki growing short with thick stems instead of long and slender?

The classic long, pale, noodle-like Enoki shape develops when light levels are low and a little carbon dioxide builds up around the kit. If your mushrooms are coming up shorter and stockier, the kit is getting plenty of fresh air and ambient light. They are still perfectly edible and taste excellent, but to encourage the slimmer supermarket-style look on the next flush, move the kit to a dimmer, more enclosed spot away from draughts.

How should I mist my Enoki kit?

A light spray twice a day is enough. The aim is to keep the surface moist without leaving water pooling on top of the substrate. Enoki prefers a humid environment, so if your home is particularly dry you can drape a clear bag loosely over the kit between mistings to hold moisture, removing it once a day for fresh air. Never seal the bag tightly, as some airflow is essential.

How do I know when to harvest?

Harvest when the stems are long and firm and the caps are still small, tight and closed. Cut the cluster at the base with a clean knife rather than pulling, which protects the surface for the next flush. If you see fine white dust around the kit, the mushrooms are dropping spores and are slightly past their best for picking, though they are still perfectly safe to eat at this stage.

What can I cook with Enoki mushrooms?

Enoki is the classic mushroom for ramen, miso soup, hot pots, Korean pancakes and quick stir fries, where its slender stems hold their shape and add a gentle crunch. They cook in seconds and are best added at the very end of preparation. Enoki pairs beautifully with garlic, soy sauce, butter, spring onions and a squeeze of lemon. Always cook before eating rather than serving raw.

How do I store fresh Enoki after harvest?

Keep harvested Enoki in the fridge wrapped loosely in kitchen paper inside a paper bag or perforated container, never sealed in plastic. They will stay fresh for around 7 to 10 days. Trim the very base of the cluster before use, as the stub end can hold moisture and soften first.

Can I grow Enoki mushrooms outdoors?

Yes. Enoki, also known as Velvet Shank in the UK, is a cold-weather woodland mushroom that fruits naturally on hardwood logs in late autumn and winter. It is well suited to outdoor log cultivation in the UK climate and is one of the varieties available in our Outdoor Mushroom Log Growing Kit range. This indoor Ready Growing Kit, however, is designed to be kept indoors so you can enjoy a cool-season crop on a kitchen counter or shelf.

What can I do with the spent compost?

Once your kit has finished producing mushrooms, the spent compost makes an excellent addition to your garden. It is peat free and full of organic matter that will improve soil structure and feed your plants. Simply break it up and dig it into beds, borders or containers.
