Tarragon Oyster Mushrooms: Frequently Asked Questions
What is Tarragon Oyster and why is it special?
Tarragon Oyster (Pleurotus euosmus) is a rare British native oyster mushroom, thought to be found only in the British Isles and almost never produced commercially. It is closely related to the common Pearl Oyster but differs in one remarkable way, its powerful aroma and flavour of fresh tarragon and aniseed. Many growers and chefs consider it the finest-tasting oyster mushroom of all. Our strain traces back to a culture originally isolated from a fallen beech tree in ancient Yorkshire woodland, making it a genuine part of Britain's wild mushroom heritage.
What temperature do Tarragon Oyster Mushrooms need?
Tarragon Oyster mushrooms fruit best between 14 and 24°C, with 19 to 21°C being the ideal range. They are a warm-loving variety that thrives at normal indoor room temperature in most UK homes and is especially well suited to centrally heated properties and the warmer months of the year. Avoid placing your kit in direct sunlight or right next to a radiator, but a warm kitchen, conservatory or living room is perfect.
How long does a Tarragon Oyster kit take to crop?
Tarragon Oyster is slower than our other oyster kits. Expect your first harvest around 15 to 20 days after starting the kit, and a second flush around 30 days or more after the first. This is a variety where patience genuinely pays off. The longer development time is part of what gives the mushrooms their depth of flavour and intense tarragon aroma, so it is well worth the wait.
How much will my Tarragon Oyster Kit yield?
Each kit will produce a total yield of approximately 800g to 1kg of fresh mushrooms across all flushes, depending on growing conditions. The first flush is typically the largest, with smaller follow-on flushes producing the same intensely aromatic, herbal-tasting mushrooms.
How many flushes will my Tarragon Oyster Kit produce?
Most kits will produce two to three flushes of mushrooms. The first flush is usually the largest. After each harvest, continue spraying the holes and the next flush will typically appear around 30 days later, often more. Tarragon Oyster rests for longer between crops than other oyster varieties, so do not be alarmed if it takes a while for the next flush to appear.
What do Tarragon Oyster Mushrooms taste like?
Tarragon Oyster has a distinctive fresh tarragon and aniseed aroma that becomes even more pronounced when cooked. The flavour is rich, savoury and herbal with a gentle liquorice sweetness, noticeably deeper and more aromatic than a standard oyster mushroom. It works beautifully in creamy sauces, risotto, chicken and fish dishes, omelettes, and anywhere you would use tarragon as a herb. A simple pan-fry in butter with a splash of white wine is one of the best ways to showcase the flavour.
What do Tarragon Oyster Mushrooms look like?
Tarragon Oyster produces elegant clusters of trumpet-shaped mushrooms with creamy white caps marbled with soft light grey. As the caps mature they become slightly depressed in the centre, giving them their characteristic funnel shape. They are more brittle than a standard oyster, so handle them gently when harvesting and cooking.
Why are my Tarragon Oyster Mushrooms growing long stems with small caps?
Long, stretched stems with small caps are a sign that the mushrooms need more fresh air. This is a common issue when kits are placed in enclosed or poorly ventilated spaces. Move the kit to a spot with better air circulation and the next flush should produce shorter stems and wider, meatier trumpet-shaped caps.
How is Tarragon Oyster different from White or Summer Oyster?
Tarragon Oyster is closely related to the common Pleurotus ostreatus and behaves similarly in many ways, but the differences on the plate are dramatic. It has a distinctive herbal tarragon and aniseed scent and flavour that no other oyster mushroom shares, along with a more elegant trumpet-shaped cap and attractive grey marbling. It is also slower to crop than White Oyster or Summer Oyster, taking 15 to 20 days for a first harvest rather than 7 to 10. If White Oyster is the everyday workhorse and Summer Oyster is the warm-home favourite, Tarragon Oyster is the special-occasion variety you grow for its aroma alone.
Can I grow Tarragon Oyster Mushrooms outdoors?
Yes. Tarragon Oyster is a wild British mushroom that fruits naturally on fallen hardwoods, most famously beech, in ancient woodland. It is well suited to outdoor log cultivation in the UK climate and is one of the varieties available in our Outdoor Mushroom Log Growing Kit range. Because it is a native species, growing it on a log in your garden is both a rewarding culinary project and a nod to Britain's woodland heritage. This indoor Ready Growing Kit, however, is designed to be kept indoors for best results.
How do I know when to harvest?
Harvest when the caps have fully opened into their trumpet shape and the centres have just started to become slightly depressed, but before the edges begin to curl upwards. Handle the clusters gently, as Tarragon Oyster is more brittle than a standard oyster. If you notice a fine white dust on the surface of the box or surrounding area, the mushrooms are dropping spores, which means they are slightly past their best picking point. They are still perfectly safe to eat at this stage, just pick them promptly.
What can I do with the spent compost?
Once your kit has finished producing mushrooms, the spent compost makes an excellent addition to your garden. It is peat free and full of organic matter that will improve soil structure and feed your plants. Simply break it up and dig it into beds, borders or containers.
